pancake tuesday

and of course I did not get a picture of my food as I was so hungry ;) The pancakes I made were awesome. The recipe I used was actually for pumpkin pancakes that I got off another blog but adapted the recipe to make banana pancakes :)

I apolgize for not knowing where I got this recipe from and hope no one is offended by me posting it. I am not claiming that it was my own recipe.

banana pancakes

1/2 c whole wheat flour
1/2 tsp baking powder
1/2 tsp baking soda
1 mashed banana
1 egg white
1 tbsp honey (or agave nectar...not sure if you even need this...will leave it out next time)
chopped walnuts
1/2 c of milk of choice (i used 1% as that is all we have in the house)

mix flour, soda and powder
in another bowl add wet ingredients and nuts
combine both mixtures...mix until just blended

pur batter in a non-stick skillet or griddle over med heat sprayed with cooking spray. Enjoy with topping of choice :)

I really did enjoy these pancakes and have enough for tomorrow morning. I think that these will be made for my cooler when working days. I can have 4 small ones and have 2 before going to work and then 2 when we have our first break at work. I have always found pancakes very filling.

I will be having a snack in a bit which will be a banana scramble with 1 tbsp of peanut butter :)
